This amazing pasta can be made in 20 min and only need 1 pan from start to finish. How EASY is that?!
2 tbsp olive oil
2 to 3 smoked turkey sausage, sliced
1 medium onion, finely diced
3 garlic cloves, minced
4 ounces mushrooms, sliced
16 ounces penne pasta
4 cups chicken stock
24-28 ounces pasta sauce of choice
½ tsp dried oregano
1 tsp dried basil
¼ cup shredded cheddar cheese
salt and pepper, to taste
1 cup baby spinach
Place the oil and sliced sausage on a large non-stick pan and cook on medium heat until golden brown. Add the chopped onion and garlic and saute until translucent, approximately 3-5 minutes.
Add the sliced mushrooms, penne pasta, chicken stock, pasta sauce, oregano, and basil into the pot and stir to combine. Turn the heat to high and bring it to rapid boil. Stir the mixture and turn the heat down to low. Put the lid on the pan and allow the mixture to simmer over low heat for 13-15 minutes or until the pasta is al dente. Stir it every five minutes while simmering to prevent sticking to the bottom.
Add the baby spinach and mix to combine.
Season with salt and pepper.
Garnish the pasta with shredded cheddar cheese.
